Guest cards — preferences, allergies, emergency contact
Keep a card for every guest: food and drink preferences, allergies, preferred bunk, and who to call if something goes wrong.
Guests aren't crew and they aren't members — they're their own record in the Ship's Directory. A guest card holds contact details, food and drink preferences, a preferred bunk, an emergency contact, and three separate notes fields that are deliberately not one field: allergies, dietary notes, and medical notes.
That split is the point. Allergies are safety data; dietary notes are provisioning — vegetarian, no red meat; medical notes are neither. Keeping them apart is what stops 'prefers oat milk' from burying 'anaphylactic to shellfish' in the same paragraph.
Who sees a guest card: the owner, the captain and the manager see every crew and guest card, allergies, dietary and medical notes included; each person sees their own card; other crew do not. On a signed-in boat a crew member's phone receives no guest card that is not about them: there the Ship's Directory says guest cards are kept for the owner, captain and manager and offers no New Guest. A guest opens theONE to their own screen — Your trip, Message the crew and My guest card — and My guest card shows a guest the card about them when their own account is signed in on that phone, and lets them change it — or make one, if the boat has none linked to them. On a phone signed in as someone else — the captain's, handed to a guest — it shows no card; read theirs to them. A guest's allergies show on that guest's row in the Ship's Directory, prefixed "Allergies:"; they do not reach a trip's allergy strip, which reads crew cards. On a boat that is not signed in there is one phone, and it holds every card.

Allergies are safety data
Keep Allergies for what would send someone to hospital; put preferences in Food/Drink and restrictions in Dietary. The owner, captain and manager see it on every guest card; other crew do not, so tell whoever is cooking about the shellfish allergy.

One emergency contact per guest
Name, relationship and a number. It rides on the card, so whoever is running the leg has it without asking the owner.
