Light, dark, and the sun-moon button
Where the sun/moon button lives, what it does, and why System is in Preferences instead.
AppearanceMode has three values — System, Light and Dark. The header sun/moon button flips Light ↔ Dark only; System is set in Preferences (Settings → Preferences → Appearance). Two controls, one setting — whichever you touch, the other agrees.

Where the toggle lives
It is a SUN/MOON BUTTON IN THE TOOLBAR, not a row in the menu — it sits at the top right of most screens, including Mission Control, Today, Trips, Vessel Briefing, Playbook, Calendar, Maintenance, Observations, Fleet, Stowage, Settings and Vessel Setup. The hamburger has no appearance row on any tab.
For the full three-way choice — System, Light, Dark — go to Menu (☰) → Settings → Preferences → Appearance. The button only flips between light and dark; Preferences is where you hand the decision back to iOS.

What it does
Tapping flips Light ↔ Dark app-wide. The choice persists via @AppStorage so the next launch comes back the same way. It will not return you to System — that is the Preferences picker's job.

About haptics
There is no haptics on/off setting today — haptics fire on key confirmations (delete, end leg, MOB arm). If you want them quieter, mute system sounds at the iOS level.
